Coconut Macatia

Ingredients

Dough

  1. 1000g Farathas Blédor
  2. 10g salt 3. 15g yeast 4. 470g water 5. 3g bread improver
  3. 150g Sugar
  4. 150g Margarine

Coconut Filling

  1. 100g grated dry coconut
  2. 100g Sugar
  3. Water for binding
  4. Vanilla essence by taste

 

Preparation

Coconut Mixture

Preparation: Mix the grated coconut, sugar, water and vanilla essence without melting the sugar.

 

Dough

  1. Weigh all ingredients separately.
  2. Knead for 3 minutes on the first speed and 6 minutes on the second speed by incorporating the fat at the end.
  3. Rest for 20 minutes
  4. 4. Divide into 35g portions and shape into tight balls.
  5. Relaxing: 10 minutes
  6. Shaping: Fill with the coconut mix
  7. Fermentation: 90 minutes.
  8. Baking : 10 to 12 minutes, without steam in a preheated oven at 180°C-220°C.
