Doughnuts 

Ingredients
Doughnuts Dough

  • 1 egg
  • 190 g of skimmed milk
  • 30 g of brown sugar
  • 10 g of dry yeast
  • 450 g of Blédor Pâtissière
  • 60 g of butter
  • 1 tbsp salt

 

Chocolate icing mix

  • 80 g of black chocolate for pastry 52%
  • 60 g of liquid cream

 

Preparation

  1. Preparation of dough: Place the ingredients in order, in the bowl of a kneading machine: yeast, slightly heated milk, egg, flour, sugar and salt. Knead for 2 min.
  2. Add the butter and knead for about 5 min at medium speed until full absorption of butter.
  3. Cover and let the paste leaven for at least 1h30 to twice its volume.
  4. Degas the dough, cover it with food film and reserve for 30 min.
  5. After this time, spread it over 5mm thick.
  6. Cut 5 cm circles and make a hole in the centre and put the dough aside again for 30 minutes.

 

Cooking options:

  • Bake in very hot oil in a very deep pot or
  • Bake in a preheated oven at 200°C for 7 min.

 

Icing

  • Heat the cream until the first boil and add the chocolate. Mix until homogeneous.
  • Dive the top of the donuts into the icing mix and lay them on a grid. Spinkle whatever you want: crushed almonds, sprinkles, cinnamon...
