Fruit Cake

Ingredients

  1. 500g Blédor Self-Raising
  2. 5g Salt
  3. 350g Sugar
  4. 400g Butter
  5. 8 Whole eggs
  6. 100g Dried Fruit
  7. 5ml Vanilla essence or other flavour

 

Preparation

  1. Macerate the dried fruits for one hour in warm water, fruit juice or rum.
  2. Mix the sugar and butter until the sugar is completely dissolved.
  3. Add the eggs and mix carefully to get a creamy consistency.
  4. Then add the essence, flour, salt and finally the dried fruit to obtain a homogeneous mixture.
  5. Place the paste in pre-buttered pan.
  6. Cook for one hour in the oven preheated to 180oC -190o
