Sponge cake dough

Ingredients

  1. 125g Blédor Pâtissière
  2. 125g sugar
  3. 30g Butter (optional)
  4. 4 Whole eggs

Preparation

  1. Place the whole eggs in a stainless-steel bowl and add the sugar. Whip this mixture in a double boiler until it forms a ribbon
  2. Remove the bain-marie and continue to whip until fully cooled.
  3. Then add the flour gradually while stirring with a wooden spatula and finally add the melted butter (optional).
  4. Pour the dough into a buttered and floured flat tin and bake for 15-20 minutes in the oven preheated to 2000C.
