Designed for various professional uses, Concorde flours are offered in either 25 kg polypropylene bags or 10 kg paper bags, depending on the references.

They are

Extra : for bread making
Brown Bread Flour
Premium : for pastries and cakes
High Protein : for pancakes, cookies and pastries.
Cake : for pastries and baking.
Pasta : for farathas, brioches, puff pastry, pizzas, pasta, noodles,
soft bread, burgers, sandwich bread or coconut macatias.
Self-raising : for raised cakes, fritters and doughnuts
Semolina : for cookies, cakes, oriental delights, halwas, pudding and pasta
Super : for various uses
Tradition : for traditional bread
Pizza-farathas : for farathas, unleavened bread, sandwich bread

 

Farine des Alizés

The Farine des Alizés range has been designed to meet local demand and that of neighbouring islands. These flours are specially recommended for preparation of French style tradition bread. These products are marketed in 25 kg paper bags.


  • Extra : tradition bread using the direct method or controlled fermentation
  • Gruau : for pastries and baking
  • Mi-Crème : for bread with a cream-colored crumb

DoMix

DoMix products are bakery mixes containing blends of wheat flour and bakery ingredients. They are used in addition to white flour for making special breads. These products are marketed in 10 kg paper bags.

  • Multigrains : Special breads and biscuits
  • Campagne : Country-style special breads
  • Nordic : Nordic-style special breads
  • Seigle : Rye-style special breads

Optimale

Les Moulins de La Concorde offers bakers their “Optimale:” bread improver, available in 10 kg paper bags. It enhances dough tolerance, prolongs fermentation and increases bread volume.
